This year, I wanted to bake my co-workers a treat before they left for the holidays and chose to go with a Naughty or Nice theme to play up the two extremes.
For the Paleo Brownie Bites, I used a past recipe. In each box, I also included a parody of Twas the Night before Christmas focused on our team.

In other news, James bought a 16 lb turkey last weekend, so we had what I like to call Thanksmas on Sunday night. Who cooks a 16 lb turkey between Thanksgiving and Christmas? We do! Besides turkey with gluten-free gravy, we had scalloped sweet potatos, broccoli and cranberry sauce.
Despite his hollow leg, James couldn’t make a dent in this bird. He picked it, then decided to make turkey soup, which, remarkably, has lasted 5 days! I’ve had a bowl every day, and who knows how many James has had.
What did he use to make it? Pulled turkey, turkey stock, carrots, celery, onions, mushrooms, zucchini and spicy kielbasa. Great comfort food for a week of sub-freezing temps.
It made 2 gallons worth! It’s hard to tell from the picture, but this tupperware holds 3.5 quarts each.
This definitely rivals Mama’s Best Soup 🙂
