buffalo chicken stuffed sweet potatoes

Last week, I spotted a recipe for Buffalo Chicken Stuffed Sweet Potatoes from Against All Grain and I knew I had to make my own, simpler version…because who doesn’t like anything buffalo chicken?

I vehemently abhor both ranch dressing and mayonnaise–always have, always will. So I set out to create a similar recipe with less ingredients taking less time, because I’m determined to build a decent recipe file of Easy RV Meals before we set off for our RV trip in a couple months.

I’m definitely adding this to the RV recipe rotation. Leftovers are also amazing cold atop a simple salad or wrapped in bibb lettuce.

A super simple yet tasty recipe I'm adding to my list for easy RV meals. Adapted from a recipe by Against All Grain.

    Ingredients

    Instructions

    1. Using medium saucepan, saute celery and carrots in butter on medium heat until tender, roughly 12 minutes. Remove from heat.
    2. At the same time, saute chicken in covered pan or skillet for 4-6 minutes on each side. (Check to make sure chicken is fully cooked.)
    3. After the chicken has partially cooled, dice it into small cubes and place in saucepan with vegetables.
    4. Stir in yogurt and hot sauce, and spoon atop baked sweet potatoes.
    5. Garnish with cheese, avocado or ranch/blue cheese dressing.

Day to day, I help my husband with his small business, but when I have any extra time, you can find me cooking or being active outdoors with my family. We live at the foothills of the North Georgia mountains and are embracing modern homesteading month by month.
