apple night…made easy

A month ago, my friend Lindsey and I held our first annual Pumpkin Night in honor of the seasonal, delicious squash. Since fall is also apple season, we tried our hand at Apple Night on Wednesday. Though we weren’t quite as ambitious as Pumpkin Night, we managed to make a tasty, healthy meal–if you overlook the Malbec, of course.

The first course was a small cup of Butternut Squash and Apple soup that Lindsey made a month ago. The recipe made so much that she was able to freeze some, which made the first course of Apple Night super easy. We chose to garnish our soup with crumbled bacon, rosemary and an apple wedge to make it look–and taste–like a million bucks.

Once we realized just how nice it was to be lazy, we came up with an easy solution to our main entrée. Lindsey laid down a bed of spinach, sliced and aesthetically arranged apple wedges, then whipped up a delicious homemade salad dressing. I’m not exactly sure what she put in it–but I noted garlic, balsamic vinegar and mustard.

Meanwhile, I tackled sautéing our Mahi Mahi fillet, while sipping Malbec and nibbling on cheese. It’s a hard life, I know.

I used the same pan I’d cooked bacon in earlier and turned the burner to medium high heat. (Side note: I heart cooking with bacon grease.) Then I seasoned the fillet on both sides with salt and pepper, placed it in the sizzling pan and squeezed half a lemon over it. I let it cook for 2.5 to 3 minutes on both sides.

Then, we split the fillet and placed on both salads. We topped this simple masterpiece with roasted pistachios, mini cubes of marbled cheese and Lindsey’s homemade dressing.

This quick and easy meal let us enjoy the finer things in life, like Real Housewives of Atlanta. It was my first time watching the show, and I kept thinking, what do these people do to make a living in Atlanta, especially when they live way outside the city!?!? And then I thought, oh, these women are certifiably crazy. Everyone knows you pretty much have to be crazy to end up on TV these days.
