Mega salads are my kryptonite. That’s a bold thing to say, but it’s true.
When I’m eating a salad nearly every day, I’m feeling my best. Not only because of all the health benefits of salad greens and the endless possibilities of healthy toppings, but because that salad is more than likely replacing a much less healthy choice.
As a busy mom focusing on making lunch for three kids, I sometimes find myself piecing together a late lunch with whatever I can find in the fridge. But at that ravenous point, it’s hard to know if I’ve eaten too much overall or too little protein to keep me full. So oftentimes, it leads to an afternoon of feeling overly full and sluggish or still hungry and constantly snacking.
But piecing together a mega salad for lunch—and even dinner—is ideal. Thanks to hydroponics gardening, we seem to always have salad greens. After that, it’s just a matter of layering the rest of the ingredients: protein, veggies, fruit, nuts, cheese and fun toppings.
